These over-the-top biscuit dishes may not be for every day–but they sure are a scrumptious way to treat the biscuit lovers in your life. (Even if that person is you!) While just about any basic biscuit will work here, we think that basic White Lily Buttermilk Biscuits make an ideal base–just cut them a bit larger before baking, so that they are sandwich, rather than side dish sized.

BBQ Biscuit Benedict
Split a large buttermilk biscuit. Cover each half with a heaping spoonful of pulled pork. (Homemade or store bought is fine.) Top the pork with two sunny side up fried eggs. Drizzle with hollandaise sauce and garnish with finely chopped fresh parsley. Serve hot.

Huevos Rancheros Biscuit Sandwich
Split a large buttermilk biscuit. Spread one half with warmed refried beans and the other half with guacamole. Top the refried beans side with scrambled eggs, a spoonful of sour cream, and pickled jalapenos. Top with the other half of the biscuit. Serve hot with more guacamole and hot sauce on the side.

Biscuit Burger
Split a large buttermilk biscuit. Top one half with a slice of cheddar cheese. Top the cheese with a hamburger patty cooked to medium rare. Top patty with sunny side up fried egg and a spoonful of sautéed onions. Smear the other half of the biscuit with mayo and top the burger. Serve hot with plenty of napkins!
