Ingredients

ROASTED TOMATOES

  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • ½ onion chopped
  • Olive Oil
  • Salt and Pepper
  • Salt and Pepper
  • Lettuce – Any will do, we prefer Arugula

Instructions

  1. PREPARE Callie's Buttermilk Biscuits.
  2. PREPARE roasted tomatoes according to recipe below.
  3. OPEN each biscuit sandwich style. Layer sliced avocado, roasted tomatoes, and arugula on one half, top with the other half of biscuit and enjoy!

ROASTED TOMATOES

  1. COMBINE ingredients on a sheet pan and roast for 15 min. at 350°F.

If batter does not fill every cup of the muffin pan, put a few tablespoons of water in the empty cup to keep muffins moist and to protect the pan from warping.
